Mini jello watermelon slices

Happy Independence Day weekend, people of the United States. I leave you with this idea for petite watermelons made from jello and limes, by Chocolate on My Cranium. You can make some for your picnic tomorrow. Have a good weekend!

It reminds me of my father used to ask me "Is it okay not to buy a birthday cake, instead cut the watermelon half and put candles for your birthday?" He knew I wanted a whole cake and enjoyed making me anxious.

I made some of these yesterday for a group picnic. It was a lot of work removing the fruit from the limes. Anyone have an easy way to do this? I turn the limes inside out and it came out fairly easily but turning them inside out was hard.

And i just left them in halves because I was afriad of ruining them. But I froze them so they would be a nice treat to cool down after being outside in the terrible Houston heat. Everyone loved them! You could make fun little jello shots this way...but mine were purely cherry jell, no "extras" added.

I made these for my kids tonight, but was in a rush, so they weren't set really well.

When I told them that we were having watermelon for dessert, they whined and whined. "That's not dessert mom!"

Then my son proceeded to pick out all the chocolate chips, while my daughter smeared red berry all over her face. A hit!

It is tough to get the lime out, but I scored with a pointy knife around the edges, and then cut some lines both ways through the inside.

That is such a great idea and i had them for st.patrick's day at my friend's house....the problem is.. i need someone to teach me how to load the watermelon with jello inside?
